Cathédrale Las Vegas: A Feast for the Senses
April 27, 2023
Cathédrale, a French-Mediterranean restaurant, and bar located in the ARIA Resort & Casino, is a breathtakingly beautiful and immersive dining experience. Created by Tao Group Hospitality and designed by Rockwell Group, Cathédrale pays homage to the original East Village restaurant while embracing the drama and grandeur of Las Vegas.
The stunning interior of Cathédrale is a feast for the senses. Two sculptural metal bead chain installations hover above the bar and the main dining room, adding to the visual spectacle of the architectural and design details layered into the space. The material palette is accented with cognac and blue leather furniture, distressed mirrors, circle-sawn wood paneling and tabletops, polished metal details, and distressed wood and concrete floors.
But it’s not just the design that impresses. The elemental, ingredient-driven menu, created by Executive Chef Jason Hall and helmed by Culinary Officer Ralph Scamardella, features unique coastal fare influenced by the regions of France, Spain, Italy, and Greece. Signature dishes include The Omelette, filled with crème fraiche and chives, topped with fingerling potato chips and Kaluga caviar, a 22-ounce Prime Aged Ribeye with rotisserie leeks and sauce vert, and the Salt Baked Mediterranean Sea Bass, presented tableside with rocket arugula, steamed potatoes, and Sorrento lemon. Complementing the cuisine is an expansive wine list and spirit selection, with inventive takes on classic cocktails.
In addition to the main dining room, Cathédrale also offers two separate and spacious private dining rooms that can function independently for intimate gatherings or cohesively to offer guests a taste of the restaurant’s captivating energy. The private dining room, adjacent to the main dining room, can be portioned into two smaller rooms and offers guests an opportunity to enjoy their own space while experiencing the overall energy of the restaurant, with blue velour curtains lining the windows that can be closed for additional privacy. A larger semi-private dining room acts as an extension of the main dining room and can function independently or cohesively with the rest of the space.
The architectural drama and grandeur of Cathédrale is palpable from the moment guests enter the restaurant. The cascading blue velour drapery that lines the venue exterior invites guests to continue along a dramatically lit tunnel with flicking candles that reveal a carved artwork by Portuguese artist Vhils at the end of the hallway. The lounge features an impressive sculptural metal beaded chain canopy hovering above the bar. Further inside, a theatrical and monumental ceiling installation draws attention to the mesmerizing main dining room. Both the bar and main dining room ceiling installations were created by South African lighting company, Willowlamp.
Stunning views are served nightly alongside the exquisite cuisine at Cathédrale. The restaurant offers a captivating energy and an immersive dining experience that celebrates the architectural drama, grandeur, and decorative flourish inherent to the restaurant’s brand. Cathédrale is not just a restaurant; it’s an urban landmark that has to be experienced to be believed.
