Ingredients:
- Shishito peppers: 1 cup (about 4 ounces)
- Ponzu (Miyako): 2 teaspoons
- Crispy bonito: 2 tablespoons (see recipe below)
- Salt: to taste
- Lemon wedge: for garnish
Instructions:
- Prepare the Fryer: Place shishito peppers in a fryer basket with another basket on top to keep them submerged.
- Frying: Drop the baskets into a 350°F fryer for 30 seconds.
- Draining: Remove the baskets from the fryer and drain excess oil.
- Seasoning: Season the fried shishito peppers with ponzu sauce and salt.
- Serving: Place the seasoned shishito peppers in a bowl, garnish with crispy bonito, and add a lemon wedge on the side.
Crispy Bonito
Ingredients:
- Shredded bonito flakes (Itokezuri): 2 cups (about 2 ounces)
- Soy sauce (Yamasa regular): 1/4 cup
- Sake: 2 tablespoons
- Mirin: 2 tablespoons
- Sugar: 1 tablespoon
Instructions:
- Cooking the Sauce: In a sauté pan, combine soy sauce, sake, mirin, and sugar. Cook over medium heat until the sugar melts completely.
- Adding Bonito Flakes: Add shredded bonito flakes to the mixture and cook, stirring frequently, until the bonito flakes become crispy.
- Cooling: Allow the crispy bonito mixture to cool to room temperature.
