Instructions:

  1. Prepare the Fryer: Place shishito peppers in a fryer basket with another basket on top to keep them submerged.
  2. Frying: Drop the baskets into a 350°F fryer for 30 seconds.
  3. Draining: Remove the baskets from the fryer and drain excess oil.
  4. Seasoning: Season the fried shishito peppers with ponzu sauce and salt.

Crispy Bonito

Ingredients:

  • Shredded bonito flakes (Itokezuri): 2 cups (about 2 ounces)
  • Soy sauce (Yamasa regular): 1/4 cup
  • Sake: 2 tablespoons
  • Mirin: 2 tablespoons
  • Sugar: 1 tablespoon

Instructions:

  1. Cooking the Sauce: In a sauté pan, combine soy sauce, sake, mirin, and sugar. Cook over medium heat until the sugar melts completely.
  2. Adding Bonito Flakes: Add shredded bonito flakes to the mixture and cook, stirring frequently, until the bonito flakes become crispy.
  3. Cooling: Allow the crispy bonito mixture to cool to room temperature.
