Cathédrale by Tao Group Hospitality honors the legacy and DNA of the original restaurant located in New York City’s East Village. Rockwell Group’s remarkable interior design for the Las Vegas location extends the spirit of that layered urban decadence and grit while celebrating the architectural drama, grandeur, and decorative flourish inherent to the restaurant’s brand. A French-Mediterranean restaurant and bar, located

in ARIA Resort & Casino’s hotel lobby, is open nightly for dinner and drinks.

Two extraordinary sculptural metal bead chain installations hover above the bar and the main dining room, drawing attention to the brilliant visual feast of architectural and de- sign details layered into the space. Two separate and spacious private dining rooms can function independently for intimate gatherings or cohesively to offer guests a taste of the restau- rant’s captivating energy.

The elemental, ingredient-driven menu, helmed by Culinary Officer Ralph Scamardella and created by Executive Chef Jason Hall, features unique coastal fare influenced by the regions of France, Spain, Italy, and Greece. Signature dishes include The Omelette, filled with Crème Fraîche and chives, topped with fingerling potato chips and Kaluga caviar, a 22-ounce Prime Aged Ribeye with rotisserie leeks and sauce verte, and the Salt Baked Mediterranean Sea Bass, presented tableside with rocket arugula, saffron potatoes and Sorrento lemon. Complementing the cuisine is an expansive wine list and spirit selection, with inventive takes on classic cocktails.
